Tuscan Eggplant Salad
Golden fried eggplant cutlets over mixed greens topped with sliced buffalo mozzarella and a marinated artichoke salad with red onion, diced tomato, roasted red pepper and basil drizzled with EVOO and a balsamic glaze.
One of my all-time favorite salads! Love the combo of the eggplant and the marinated artichokes.
This is the best salad ever. There's not many vegetarian salad options at most restaurants with actual substance, but Waterfront added this to the menu and I'm obsessed.
